Hi everyone. I am so happy to be back blogging and sharing stuff to you again. Also I would like to congratulate my home team, Seattle Seahawks for being the Super Bowl XLVIII Champions. I am so proud to be living here in Seattle and be a part of this triumph. Today is actually their victory parade which all of Seattle attended and witnessed, I think. ng to you my homemade Potatoes O'Brien. For those of you who don't know or haven't tried it yet, here is a little insight of what it is: it is a dish of pan-fried potatoes along with red and green bell peppers. This dish has claimed to be originated from a famous restaurant in Boston. The first time I tried this was at a restaurant called Shawn O'Donnell's and I loved it. I am not a big fan of potatoes but that was so delicious that I decided to make some at home. Here we go with the recipe:
Ingredients:
2-3 Russet Potatoes, peeled and diced
1 Red Bell Pepper, finely diced
1 Green Bell Pepper, finely diced
1 Onion, finely chopped
2 tbs butter
Salt and Pepper to taste
Procedure:
Heat 1 tbs butter and olive oil in a large skillet.
Add the onions and saute for 1 minute or until translucent.
Add the green and red bell pepper. Saute over medium heat, stirring frequently. You don't want them to brown.
Remove the sauteed green, red bell pepper and onions from skillet and set aside. Using the same skillet, heat 1 tbs olive oil and 1 tbs butter again.
Add the potatoes and cook them until they are cooked through and golden brown, turning them periodically.
When potatoes are golden and cooked, add the bell pepper and onion mixture. Stir to mix well.
Add salt and pepper to taste.
Serve hot and enjoy!!
